love how all the ingredients goes into one pot, making cooking and clean up easy.

lentil and Sweet Potato Stew
Ingredients:
2 tbsp. extra virgin olive oil
1 tsp cumin
1 tsp tumeric
1 tbsp curry
1 diced onion
4 minced garlic cloves
2 tbsp fresh ginger
2 peeled and diced sweet potato (sometimes I use butternut squash instead)
1 diced red pepper

fresh spinach
1.5 c red lentils
6 c. veggie broth

Instructions:
1. Heat oil in a large pot and cook onions until tender, about 5 minutes.

(rinsed) and broth.

to boil and reduce to simmer for about 25 minutes.
5. Add
spinach and simmer until wilted.

This looks great! What do you mean by 2 tablespoons of fresh ginger? Do you grate up ginger root?
ReplyDeleteYes, I either grate ginger or I recently found an organic ginger juice that works great! Ginger People is the brand.
