Chocolate Chip Chickpea Blondies

My family can’t get enough of these blondies!  They are free of flour and refined sugar and a  great way to sneak nutrient dense food into your diet.  Chickpeas are high in fiber, protein, vitamin C, and Vitamin B-6.  These blondies are great for a quick and healthy snack or dessert.  The best part is no one will even know these blondies contain chickpeas!  This recipe is slightly altered from Clean Food Crush.  I reduced the amount of sweetener, but feel free to adjust accordingly to your own personal palate. 




Ingredients:
2 cups chickpeas (drained)
½ cup almond butter
2 tablespoons raw honey or pure maple syrup
¼ teaspoon baking powder
¼ teaspoon baking soda
1 ½ teaspoon pure vanilla extra
¼ cup of dark chocolate chips (I love Enjoy Life for the clean ingredient list).

Instructions:
1.      Preheat the oven to 350 F
2.     Line a 8x8 brownie pan with parchment paper.
3.     Mix all the ingredients in the food processor with the exception of the chocolate chips.
4.     Stir in chocolate chips. 
5.     Pour batter into the pan and evenly spread out.
6.     Bake for 25 minutes.
7.     Let cool.  It will look undercooked but will harden after it cools.
