Everything Bagels

My youngest daughter, Haley has been gluten free for 3 years now, but the whole family has been gluten free for a little over a year.  The two things my husband misses most are beer and bagels.  I have no idea how to make gluten free beer but I was happy to attempt making gluten free bagels.  The four of us are very excited with how these bagels came out.  They are delicious!  Larry and I had ours with eggs and bacon and the girls enjoyed theirs with turkey and cheese.  Glad we can all enjoy bagels again!

Everything Bagels
Makes 7

Ingredients:
½ cup full-fat coconut milk (Look for a can with BPA free lining).
2 tablespoons ground flaxseeds (To get the most nutrients out of the flaxseeds, I recommend buying the whole seed and then grinding them in a coffee grinder.)
1 tablespoon raw honey
1 ½ tablespoons active dry yeast
4 eggs
¼ cup melted ghee or virgin coconut oil
1 teaspoon apple cider vinegar
1 ½ cups arrowroot powder
1/3 cup coconut flour
1 ½ teaspoon Baking Powder
1 teaspoon fine sea salt

Everything Seasoning (Trader Joes carries this).

Instructions:
1.      Heat the coconut milk in a small sauce pan to 110F.
2.     Place the coconut milk, flaxseeds, honey, and yeast in the bowl of a stand mixer fitted with the beater attachment.
3.     Mix on low until combined.  Let mixture sit for 5 minutes, until it begins to foam.
4.     Add the eggs, ghee, and vinegar to the bowl and mix on medium speed to combine.
5.     Add the arrowroot, coconut flour, baking powder, and salt and mix again until fully incorporated. 
6.     Cover the bowl with a kitchen towel and let sit for 1 hour at room temperature.
7.     Preheat the oven to 350F.
8.     Sprinkle the molds with seasoning.
9.     Scoop the batter into a silicone doughnut pan.
10.  Sprinkle the seasoning on top of the bagel mixture as well.
11.  Bake for 20 minutes. Check with a toothpick to make sure it comes out clean.
12.  Cool first and then pop out the bagels. 
13.   Store in an airtight container in the refrigerator or freeze.
